Wait…what am I saying everything has been different lately. It seems baking is the thing that brings me joy in the kitchen and I don’t plan on stopping anytime soon. Confetti Rice Krispie™️ treats are just what I need right now.
Life Lately
Our days our long right now because well there are a thousand reasons I could list for this but won’t. I still cook as often as I usually did before all of the Covid-19 chaos began but it’s not as enjoyable for some reason. I am constantly being mindful of what I am using in the kitchen so that we don’t run of something after two days of going to the store!
Two weeks of the kids being home all day long has definitely affected our grocery bill. I feel like I am stocking up for weeks but then the food is gone within a week! That’s where the baking comes in. The kids love getting involved with it and then they have some snacks to eat as well. Win-Win!! Homemade Rice Krispie™️ treats are one of my favorite snacks! And they are even more fun to eat when you fancy them up a bit!
Baking My Way Through Spring
We have continued to eat delicious and wholesome meals at supper time but I have been so drained by the time supper rolls around that cooking dinner isn’t much fun lately which is not something I have had to deal with since 2014 when I had a newborn and two toddlers.
So here I am baking my way through March 2020 thanks to Covid-19. For the first time, I am not complaining about Covid-19.
I am in constant need of looking for the positive right now. However I can I am trying to bring happiness to those around me. Fancy Confetti Rice Krispie™️ treats make people smile. Well, at least I thought they did until I learned my two youngest kids don’t like Rice Krispie™️ treats that much. Seriously?!! Go figure!
Anyway, I wanted something a little more Easter-inspired because Easter is right around the next corner and whether we celebrate it in church or not I am going to be celebrating it! So, hello Confetti Rice Krispie™️ Treats!
They are simple.
They are pretty.
And they are absolutely delicious guys!
Oh and don’t forget those chocolate-coated Easter eggs on top!!
How can you not love a delicious treat that takes only 5 minutes?! They are the perfect spring treat for the whole family. Oh, and for the “confetti” just throw in what sprinkles you have in your cabinet from 3 years ago when you decided to make those sugar cookies with sprinkles on top and never got around to trying that recipe again, k? No need to head out to the store for new sprinkles. Use what you have.
I am amazed at how I have been able to clear out our pantry almost to nothing before we head out to the store for our grocery haul every two-ish weeks. Now is the perfect time to get creative with what you have in your kitchen and put it to good use.

Confetti Rice Krispie™️ Treats with Chocolate Easter Eggs
Ingredients
- 3 tbsp unsalted butter
- 1 lb Jet-Puffed Marshmallows or Mini Marshmallows
- 6 cups Rice Krispies™️ or crispy rice cereal
- 1/4 cup pastel star sprinkles (or whatever you have on hand!)
- 15 chocolate Easter eggs
Instructions
- Spray a 9x13 baking pan with non-stick or olive oil spray and set aside. Add butter and marshmallows to a large microwaveable bowl. Microwave on HIGH for 1 minute, stir (using a rubber spatula coated with non-stick or olive oil spray) and microwave approx another 15 seconds if needed. Stir until butter and marshmallows are well mixed.
- Stir in Rice Krispies and sprinkles. Transfer to baking pan and pat down with rubber spatula to make it even. Let cool completely prior to cutting into squares. However, I hold no judgement for digging into it right away because warm Rice Krispies™️ are heavenly. Add chocolate Easter eggs on top of treats when serving. Enjoy!!
