Delicious skinny turkey reuben sandwich aka Rachel Sandwich without cutting taste. The Russian dressing is great! This sandwich is simple, quick, and so tasty! Try this sandwich if you enjoy a lighter taste than the traditional reuben or if you just feel like switching things up a bit!
HOW I CUT CALORIES
Totally obsessed with this sandwich lately! The Russian dressing is fantastic and the fact that my 5 year-old has repeatedly asked me to make it for him this week means you should be trying this one out as well! Furthermore, I lightened up this recipe using Miracle Whip Light as opposed to Real Mayonnaise cutting 80 calories per tablespoon or 1200 calories in the entire Russian dressing recipe. Fewer calories in a dressing isn’t something I miss at all. 😉
WHERE DID THE REUBEN ORIGINATE
And now on to the name of this sandwich-The Rachel. ?? To be honest, I don’t recall ever realizing that a turkey reuben is called a Rachel. But after some investigating, the turkey reuben can also be referred to as a California Reuben or a Georgia Reuben depending on what part of the United States you are from. Confusing, huh? All I know is the Turkey Reuben is delicious! There is also some controversy about who came up with the name but one of the possible origins is Omaha, NE, which is pretty darn cool being a Nebraskan myself! The other in NYC, and so you see more than one person knew this sandwich would be a good thing!
WHAT IS IN A REUBEN?
1. Rye bread– dark or light doesn’t matter just pick what you prefer.
2. Meat– corned beef, pastrami, or turkey because the reuben does not discriminate! Pick your meat of choice and just go with it!
3. Sauerkraut/ Coleslaw– I am a once in a while sauerkraut kind of gal so when I make a reuben it is time to throw some sauerkraut in there but feel free to choose coleslaw if you would rather.
4. Swiss cheese-this is traditional, but maybe you want to be adventurous in the cheese department too! 🙂
5. Russian dressing/Thousand Island– Guys and gals, think about the Russian dressing here. For all of you thousand island lovers out there, I gotcha. I won’t steer you from a good thing. But the Russian dressing is phenomenal. In this recipe, I substituted shallot for the onion, mixed in some light miracle whip, horseradish, Worcestershire sauce, and ketchup. The end result= the PERFECT SANDWICH DRESSING! Russian dressing…just try it friends!!
And who here doesn’t want to chow down on a skinny turkey reuben sandwich that was first beautifully wrapped like they are eating at some trendy cafe that serves cute sandwiches just like this? And don’t think that I won’t continue to wrap up my Turkey Reuben sandwich in the future first because I am going to. Okay, maybe that was a lie. But I will always THINK about doing it!

Skinny Turkey Reuben Sandwich (The Rachel)
Ingredients
Russian dressing
- 1 cup light miracle whip
- 1 tablespoon horseradish
- 1 teaspoon Worcestershire sauce
- 1/4 cup ketchup
- 1 teaspoon shallot or onion minced
- 1 tablespoon parsley minced
Sandwich
- 4 slices rye bread lightly toasted
- 2 teaspoons olive oil spread I used I Can't Believe It's Not Butter olive oil spread
- 2 teaspoons Russian dressing
- 1/2 pound deli turkey sliced
- 1/2 cup sauerkraut drained
- 2 slices Swiss cheese
Instructions
Russian dressing
- Combine all of the ingredients in a small bowl and mix until well incorporated. Set aside or refrigerate until ready to assemble sandwiches.
Sandwiches
- Preheat oven to 400 degrees Fahrenheit. On a baking sheet, lay out 4 pieces of rye bread.
- Thinly spread 1/2 teaspoon olive oil spread and Russian dressing to each slice of bread.
- Add Swiss cheese, sauerkraut, and turkey to two slices of bread.
- Cover with the remaining two slices of bread and add remaining 1/2 teaspoon olive oil spread to top of sandwich.
- Bake at 400 degrees F for 12-15 minutes or until golden brown.
